"Binchōtan charcoal. A5 Wagyu. GCC soil.
The same fire that shaped Japan — now shaped by the Gulf."
Our Philosophy
TANSŌ — meaning charcoal in Japanese — was built on a single conviction: that food cooked over an open flame, with disciplined technique and precise ingredients, needs nothing else to be extraordinary.
We move beyond omakase traditions and izakaya theatrics. The room is quiet. The kitchen is expressive. Every dish is an argument for restraint as the highest form of ambition.
Daichi Vol. 01 is now live — six dishes shaped by GCC terroir, changing with the season.
Seasonal Programme
Volume 01 — GCC Ingredients · Japanese Technique
Six dishes shaped by what the Gulf's soil and sea offer at this moment. No permanence. No repetition. When the season ends, the volume closes.
The Space
A discreet Jumeirah villa transformed into a high-contrast dining room of bold colour, raw textures, and art. Designed by Samar Zakhem. Red couches against stone walls. Quiet enough to hear the charcoal breathe.
Four seats facing the open kitchen pass. Non-alcoholic cocktails made to order. The closest you can get to the flame without a chef's apron.
A secluded perch above the villa. Dubai's skyline and a private menu. Available on request.
Eight seats. Custom menus. Full kitchen access. Complete privacy.
A semi-private corner nestled between the villa's original garden walls. Shaded, intimate, and separated from the main room by a single curtain of dried botanicals.
